Why Invent More Cuisine?
Why do certain great chefs have this constant need to refine new recipes and dishes when they could be content reproducing old ones perfectly?

Whether it be with Michel Bras, who as a poet, knows how to transform fleeting feelings into culinary delights, with Pierre Gagnaire, who creates solely through his movements like a sculptor or with Olivier Roellinger whose dishes are novels, this documentary series explores the imagination of cooks. We discover that beyond differences in style, cuisine is an incredible artistic medium that does more than reflect upon the world: it eats it!

Regional cuisine is a recurring theme in French gastronomy, yet here in Roellinger’s Brittany, it takes on an ever-changing, flowing, shifting dimension, inspired by the sea. Inspired by the sea nearby, the Channel one can see from the restaurant, its shellfish, its tides, its seaweed and its moons which rhythm time and the cuisine. And by the faraway sea, beyond the sea, dangerous, on the spice route…

Pierre Gagnaire whose restaurant is situated on rue Balzac in Paris is a singular chef. While others meticulously design their plates, so that they will each be considered a work of art, he prefers to work on posture, on attitude.
He creates in a continual flux: his menu changes every month and his dishes every day as he rethinks things standing in front of the oven in relation to the reality of the product, its energy and the person he’s cooking for.
Obviously this constant evolution is tiring, and even after a 25-year career, he cannot fall back on his standards (he discontinues them before), but there’s something heroic about his desire to stay in the eternal present.

At the top of the hillside overlooking Aubrac lies the restaurant of one of France's greatest cooks, Michel Bras. He obtained his third star in 2000. Aubrac is certainly the place where France's most innovative, radical and yet most regionally-based cuisine gets cooked up.
In this film-menu like the other parts in the series, we will taste four dishes to describe cinematographically what we feel, then work our way back through its culinary fabrication to the true subject of the series: creation.
This film is the introduction to a series of portraits of 5 great chefs. Through them, we will investigate the ways that one invents and reinvents cuisine by revisiting their space and time: France today.
